Spoil your family with a healthy treat over Xmas and try these yummy high fibre cookies with Goodness Superfoods cereal.
1 cup of Goodness Superfoods cereal either Digestive, Heart or Protein (also try Barley + Oats porridge).
3 tablespoons of FibreBoost Sprinkles (optional if you want extra fibre)
1 cup of ground almond meal
1 cup of whole meal plain flour or spelt flour
3/4 cup desiccated coconut
125 grams butter
1 tea spoon of vanilla essence
1/2 cup of low GI sugar or if you prefer you can use a calorie free liquid like stevia or sucralose
1 tablespoons of golden syrup (optional)
1 teaspoon of bicarbonate of soda
21/2 tablespoons of boiling water.
Optional extras (a few teaspoons of chia seeds and or flaxseed)
A handful of dried cranberries.
Combine Goodness Superfoods cereal, flour, sugar and coconut in a large bowl. Combine butter and golden syrup in a low heat until butter is melted. Mix the soda bicarb and water and add to the butter mixture while it is still warm. Stir in the dry ingredients. Mix well. Place in spoonful’s, flattened with a fork on a baking tray lined with baking paper and bake till golden.
I like mine extra crunchy so usually turn them over after they have cooled a bit and return them to the oven till the other side is gold.
Allow tocool before moving as they tend to crumble when warm.
