1 teaspoon olive oil
1 brown onion chopped
1 cup chopped carrots
1 cup chopped spinach
1 cup chopped zucchini 
1 cup chopped celery
1 cup chopped string beans
1 cans lentils drained
1.5L vegetable stock
1 glove of crushed garlic
1.5 cups of cooked Cracked Wholegrain Freekeh

Method (serves 6 to 8)
1. Prepare Freekeh as per instructions on pack and set aside
2. Heat oil into a large saucepan on low heat add brown onion, garlic and cook until fragrant
3. Add water and stock to pot and bring to boil
4. Add all vegetables to pot and reduce heat to bring to a simmer
5. Cook for 20 minutes or until vegetables are softened.
6. Add in drained lentils and Freekeh 10 minutes prior to serving
