ROASTED CRACKED WHOLEGRAIN FREEKEH – non vegetarian
Recipe for salad
- 1c cooked Roasted Cracked Wholegrain Freekeh
- 1/2 punnet cherry tomatoes
- 1 small salad onion diced
- 1 small can of sliced beet root drained or red cabbage shredded
- 1 Lebanese cucumber chopped
- ½ c fresh pomegranate seeds
- 250g of chicken
- 1 small can of chickpea or 4 bean mix (drained)
- 2-3 T chopped coriander leaves
- ¼ c chopped walnuts or pecans
For the dressing
- 2 T olive oil
- 1 T honey
- 1 T lemon juice
- 1 T brown sugar
- ½ t pepper
- ½ t salt
Toss all salad ingredients in a large bowl.
Mix the dressing ingredients and shake well.
Add dressing to salad just prior to serving.
Serve as is or with crusty bread.
