ROASTED CRACKED WHOLEGRAIN FREEKEH – non vegetarian

Recipe for salad

  • 1c cooked Roasted Cracked Wholegrain Freekeh
  • 1/2 punnet cherry tomatoes
  • 1 small salad onion diced
  • 1 small can of sliced beet root drained or red cabbage shredded
  • 1 Lebanese cucumber chopped
  • ½ c fresh pomegranate seeds
  • 250g of chicken
  • 1 small can of chickpea or 4 bean mix (drained)
  • 2-3 T chopped coriander leaves
  • ¼ c chopped walnuts or pecans

For the dressing

  • 2 T olive oil
  • 1 T honey
  • 1 T lemon juice
  • 1 T brown sugar
  • ½ t pepper
  • ½ t salt

Toss all salad ingredients in a large bowl.

Mix the dressing ingredients and shake well.

Add dressing to salad just prior to serving.

Serve as is or with crusty bread.
