1 x 70g packet Fruit for Life Dried Blueberries
Juice of one orange
¾ cup self-raising flour
½ cup wholemeal self-raising flour
¾ cup brown sugar
½ cup chopped hazelnuts
¼ cup Goodness Superfoods Fibre Boost Sprinkles
¼ cup pepitas (pumpkin kernels)
1 ½ tsp mixed spice
125g butter, melted
1/3 cup milk
2 eggs, lightly beaten
Soak blueberries in orange juice for one hour
Sift flours together into a large bowl and return the husks to the bowl
Stir in the sugar, hazelnuts, Fibre Boost Sprinkles, half the pepitas and mixed spice. Add the butter, milk, eggs and blueberries in orange juice. Mix until well combined.
Spoon mixture into a greased and lined 10cm x 20cm loaf pan. Sprinkle with the remaining pepitas.
Bake in a moderate oven 180°C (160°C fan-forced) for 50-55 minutes. Allow to cool slightly before removing from the tin.
